I'm curious about this one? what is the ShrimpingIt going to do here exactly?
track a face and move the cam? are you going to use any sensor for this? or the cam feed that i'd imagine goes to a more powerful device do some image processing and then this is going to talk back to the uC ( MicroController ;P ) with some move camera this way or the other?

We had a work experience student build this project. Starting with no electronics knowledge, he was able to get an Arduino working, then build a Shrimping.it board, then construct the face tracker in one week. See:

The face tracking uses a laptop for the vision processing, and the serial link to tell the Shrimping.it board where to point the camera.
The main purpose of the workshop is to introduce people to Shrimping.it, and for that the persistence-of-vision project is good.
The face-tracking is for anyone more experienced in software and hardware who wants more of a challenge (and it will be hard, even if you take the whole day).
